you may use ad-hoc commands http://www.xmpp.org/extensions/xep-0133.html#get-user-stats to query the IP address of a user if you are an administrator.
The Client Sessions page in the web admin console does also show the IP addresses.
For a normal client it is not possible to find out the IP address of another client.
